Sour plums are the most ordinary of fruits. In other countries they are not eaten often, and they are certainly not used to make a sauce. But in Georgia sour plum sauce is an everyday food.
There is no standard recipe for this sauce. It has as many different tastes as there are grannies in Georgia who make it. Wild plum sauce is a famously nostalgic product for Georgians living abroad and one in three of the parcels they receive has to be the wild plum sauce. Moreover, the one sure sign that spring has finally come for good is that people begin to make wild plum sauce. This delight has only the simplest ingredient, so that there is no such thing as a wild plum sauce that doesn’t taste good, any more than a granny who isn’t good.
